SALAD DRESSING

BALSAMIC VINEGAR
Getting sick of the same salad dressing? Try this one
especially with a little feta cheese sprinkled over the top.
2 tablespoons of balsamic vinegar
2 tablespoons of extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon of soy sauce
1/2 teaspoon of sugar
2 cloves of garlic, minced
Dash of pepper
There's only one step to making this--combine all of the ingredients
in a bowl and whisk. If you want, you can add to my basic recipe by
using some oregano or basil.
TOFU DRESSING
This is a nice, creamy dressing.
1/4 pound firm tofu
1-1/2 tablespoon balsamic vinegar
2 cloves garlic
1/2 teaspoon Dijon mustard
1/4 cup water or veggie stock
2 tablespoons olive oil
1-1/2 tablespoon dill
Salt and pepper to taste
Place the tofu, vinegar, garlic, and mustard in a blender. Blend until
pureed.
Combine the water (or stock) with the oil. While the motor is still
running, add the mixture to the food processor.
Just before you serve the dressing, add the dill, salt, and pepper.
