POACHED APPLES
This is a great holiday treat, especially for a cold winter's evening.
This dish may be served either hot or cold.
combine all the ingredients in a large pot. Cover and bring to a boil.
Reduce heat and let simmer for 30 to 40 minutes, stirring
occasionally. Serve hot or cold, but if serving hot, make sure the
dish cools for at least a few minutes--it retains its heat well.
PINEAPPLE ICE

This recipe will keep you from blowing the whole meal
with a dessert. It is a simple and guaranteed dessert that won't hit
the waistline.
In a food processor, blend all of the ingredients. Pour the juice into
a large bowl (or ice cube trays) and place it in the freezer. Once the
mixture is frozen, remove it from the bowl and break it into large
chunks. Blend this in the food processor until smooth and creamy.
Return it to the bowl and then the freezer one last time for about 30
minutes or until you are ready to serve it.
Scoop it out just like ice cream and serve in a nice glass cup.
